After the positive feedback from the last POPUP, we are delighted to open a POPUP store at Pacific Place in Hong Kong starting 29 November 29 2024.

    The cheesecake is just out of the freezer. It tastes cold like an ice cream cake. The tart flavor stands out.

  • Half-thawed(1-1.5h)

    Half-thawed(1-1.5h)

    The cheesecake is thawed to room temperature for an hour to an hour and a half. The center remains frozen, which contrasts well with the creamy texture of the outer section.

Thoughts Behind our Cheesecake

Inspired by his favorite childhood dessert, this cheesecake draws from the cherished flavors his mother used to make, combined with the expertise he developed as a French chef.
In a world overflowing with information, we chose to create something simple and straightforward: "Mr. CHEESECAKE." We hope that it will be loved not only in Tokyo, but all over the world.

Koji Tamura
Koji Tamura
Born in Miura, Kanagawa. After graduating from Shinjuku Culinary School, started his career at "Restaurant FEU" in Nogizaka. Takes part in the launch of two Michelin Star rated restaurant "Edition Koji Shimomura" in Roppongi. Moves to France after working at "L'AS" in Omotesando for 3 years. After building his career at three Michelin Star rated "Mirazur" in Southern France, Menton which has won 1st place for World's 50 Best Restaurant 2019, and one Michelin Star rated "Restaurant ES" in Paris, comes back to Japan in 2016. Becomes the head chef for the world's fastest Michelin Star earned restaurant "TIRPSE" in 2017, at the age of only 31. Being nominated for World's 50 Best Restaurants' " Asia's Discovery Series" and being awarded with "2018 Gault et Millau Japon Expected Young Talent award." In addition to Mr. CHEESECAKE, he is currently an entrepreneur and owner of several businesses.
