Frozen
Enjoy at the time when it is just served. It tastes cold like an ice cream cake. The tart flavor stands out.

Half-thawed
After around 10 - 15 mins, the center remains frozen, which contrasts well with the creamy texture of the outer section.

Thawed
The cheesecake is now as creamy as a brulee. The sweet taste and aroma is most distinct at this temperature.
All of this is accompanied by an atmosphere shaped by the Japanese hospitality concept of shitsurai (しつらい)—the thoughtful art of preparing space to welcome guests—and the care woven into every part of this moment.
The Spirit of Shitsurai
Rooted in Japanese tea culture, shitsurai refers to the intentional preparation of space to create a meaningful and welcoming experience for guests, from a stone to the flowers, or a single piece of pottery.
As you step into the dine-in area, you're invited to walk up a few steps—evoking the feeling of approaching a tokonoma (床の間), the alcove in a traditional Japanese room where seasonal art and objects are arranged with care. This gentle elevation marks a transition into a space thoughtfully prepared for you.
From Cheesecake to Chair to Spoon: Every Detail Crafted with Care
To create the best experience, Mr. CHEESECAKE has collaborated with Karimoku Furniture, one of Japan’s most renowned furniture brands. From the table, chairs and showcases, crafted from maple wood—a tree deeply connected to the world of dessert.
Their smooth, refined texture echoes the silky elegance of Mr. CHEESECAKE itself. Each piece retains the natural, one-of-a-kind grain of the wood—just as every cheesecake is handmade, one by one, without artificial processing.
A Spoon Designed Especially for Mr. CHEESECAKE
Just as the shape of a glass can influence the flavor of a drink, Chef Tamura believes that a spoon can shape the way we taste. With this in mind, he set out to design a spoon for Mr. CHEESECAKE with an ultra‑thin tip—just 0.3 mm thick—which was initially rejected by the manufacturer as nearly impossible to produce.
Minimizing Friction, Maximizing Experience
The result is a spoon that greatly reduces friction, allowing the delicate, refreshing aromas of vanilla, lemon, and tonka beans in the Mr. CHEESECAKE Classic to bloom the moment it touches your tongue. It lets you fully experience the subtle shifts in texture as the temperature changes and savor every nuance of Mr. CHEESECAKE’s signature aroma—almost as if you’re tasting the cake without a spoon at all.
For guests ordering hot drinks, we invite you to take a look at the bottom of your cup as well. If you find a golden detail, it is a small symbol of good fortune.
This design is inspired by Kintsugi, a traditional Japanese art form.
Broken ceramics are carefully repaired with gold, embracing their marks as part of their character and continuing to cherish them over time. It reflects a uniquely Japanese aesthetic — finding beauty in imperfection and in things that are lovingly preserved.
All Begins with the True Heart of Cooking
After receiving the 2018 Gault et Millau Japon Expected Young Talent Award as the head chef of a Michelin‑starred French restaurant, Chef Tamura began to reflect on his true reason for cooking—not for accolades, but to bring joy through food. That passion was first sparked by a simple birthday cake he made for a friend during his high school days.
By Day a Chef, By Night a Cake Maker
Inspired by that memory, he began crafting the best cheesecake of his life. By day, he led a fine-dining kitchen; by night, he perfected his recipe on his own. Initially sold online with the “Mr. CHEESECAKE” label hand-written by himself, the cheesecake quickly gained popularity.
Touched by the response, Chef Tamura chose not to chase the world’s best titles, but to share his best cheesecake with as many people as possible.
